Six generations of our family
have raised commercial cattle in Texas.
It has become increasingly
more difficult to maintain anything resembling
a profit in the commercial cattle business. The
only consistently profitable link in the beef
distribution chain has been the publicly owned
packers, who, oddly enough, control all pricing.
The present system does not allow cattle raisers
to be rewarded for raising more superior and costly
beef.
We are finding a way to fill
the void that has been created for good-tasting,
juicy, tender, and consistent beef. We started
in 1990 by selling our commercial Angus herd and
purchasing a genetic base of "Wagyu" cattle. Wagyu,
or Kobe beef, has long been considered the best
beef in the world. However, after generations
of selective breeding, some of the physical traits,
such as maternal excellence, have been weakened.
Research from Texas A & M, Washington State,
etc., show that, without doubt, the positive genetic
traits that produce superior meat quality far
out-weigh any negative traits.
Our goal became better defined
when we were introduced to research on the Tuli
breed of cattle. Tuli cattle exhibited excellent
early maturing traits with maternal superiority.
Additionally, the Tuli has heat tolerance and
parasite-resistant traits very similar to the
Brahman. The major difference is Tuli-crossed
cattle were found to produce extremely tender
and consistent beef. Because the Tuli breed appeared
to be a breed that would assist us in completing
our goals, we became one of the first Tuli breeders
and are now the largest in the United States.
On our way to accomplishing
our goal, we find that, in addition to growing
the best tasting, most tender beef labeled "Waguli" tm (Wagyu
x Tuli), we have Wagyu genetics that will upgrade
the beef quality of any breed and Tuli genetics
that increase the productivity of any breed, while
improving the meat quality.
We know that our "Waguli" tm beef
will be the choice of the most particular beef
critics. Our intent is to continue improving the
quality of our product through genetic selection
within the Wagyu and Tuli breeds of cattle to
a point where there is no doubt that we can satisfy
the top .001% of beef consumers. Building this
type of foundation is slow, but it presents many
opportunities for those who have an interest in
improving their operation.
