Six generations of our family have raised commercial cattle in Texas. It has become increasingly difficult to maintain a profit in the commercial cattle business. The profits have been reduced by high feed, maintainance and production cost. These high cost however have not been unique to the cattle industry as all meat products have suffered equally. The primary reason for the profit problem in the beef industry is it's loss of market share in the food industry. We have put far to much time and money into the development of fast growing, larger, leaner, tougher, dryer, tasteless product that does not satisfy the consumer. Our research tells us that consumers are willing to pay more and buy more of a product which they like and know is healthy. Research from Texas A&M University, Washington St. University, Penn St. University, and The University of Wisconsin have all concluded that Wagyu beef is, because of it's high concentration of monounsaturated fats, the most healthy of all beef. Wagyu beef is not only healthy, it is without doubt the best tasting and most tender beef. These facts make Wagyu beef the most expensive beef on the market and also the most in demand.

We began to research and buy Wagyu genetics in 1990. From the time that we began converting from our commercial Angus to Wagyu cattle, it is amazing how much we have learned . The first and most difficult thing for us to comprehend was how little that we actually knew. We began to understand that we are not in the cattle business but we are in the food business. Then our concern turned to how our food looked, not how our steer looked, because our consumers were not buying the steer, they were buying the steak. They buy beef steaks because they like them and if they don't, there will be no demand. A good product produces demand and demand produces good prices. How does all this relate to the rancher? Simple, a better product has a larger demand and no matter how you market it, the product will bring a higher price. In addition a better product will help recapture market share which also increases demand.

We know that we have learned from our history but what is most important is our future, and our future is very bright with Wagyu cattle.
